  1. Place the macaroni in a pan of boiling water and add a little salt over a high heat
  2. Chop the onion and red onion
  3. Melt butter in a saucepan then add the onions over a medium heat and add cayenne pepper
  4. Chop the chicken fillet into small chunks and the bacon rashers in lardon type sizes
  5. Add a little butter to a frying pan and cook the chicken until sealed (All sides are white)
  6. Add the bacon to the pan with chicken and sprinkle Cajun spices across all the meat
  7. Once cooked, drain the macaroni and run cold water through it
  8. Once the onions become slightly see through, add more butter to the pan
  9. Change to a lower heat and add flour gradually to the pan of onions and butter and continuously stir
  10. Add milk to the pan to make onions in a sauce
  11. Once the meat is cooked, you can add it to the sauce pan
  12. Set the oven to preheat at 200 C
  13. Begin adding cheese to taste while continuously stir the sauce
  14. Transfer the Mac and cheese to a cooking dish
  15. Lightly cover the top of the Mac and cheese with grated cheese
  16. Cook in the oven until the cheese is melted and bubbling
  17. Take out the oven and serve up
